Summer fruits are starting to grace my local produce market with their presence. The daily deal that was being offered on mangoes could not be passed up, so they made their way home with me and into the side salad for that night’s dinner. It was also the first time I have seen pomegranates back at the markets and I couldn’t pass on them either. Accompanied by freshly shelled peas and you have a bright and decorative raw side salad. If you like it dressed, I have that covered too. My man Matt is a master, (try saying that four times fast), of vinaigrettes. He whipped up a Dijon pomegranate vinaigrette from thin air before I even finished styling the salad!
Before I get into the recipe, I just wanted to share how in love I am with the bowl in this shot. Handmade pottery by Ken at KRI – Pottery, Matt bought this for me on a recent work trip to sunny Queensland. Not too shabby for its debut in my photography!
Mango & Pomegranate Side Salad with a Dijon Pomegranate Vinaigrette
Serves 2
Ingredients
Salad
1 generous handful of rocket leaves
1 generous handful of mixed lettuce
1/3 cup cubed cucumber
1/3 cup fresh peas, shelled
1/3 cup pomegranate seeds
1/3 cup cubed mango
Vinaigrette
3 teaspoons olive oil
2 teaspoons white wine vinegar
2 teaspoons of pomegranate juice (squeeze a handful of pomegranate seeds to extract the juice)
1/2 teaspoon Dijon mustard
cracked pepper
Directions
Mix together the lettuce and place on a serving plate. Sprinkle the cucumber, peas and pomegranate seeds over the lettuce then place the mango pieces on top.
Combine all the ingredients of the vinaigrette together in a small dish and accompany it with the salad.

Yes the exposure is lovely. I am a little scared of the darker, less even light – but it is so much more powerful then light and bright!
