Paleo Red Curry Beef Recipe

Every November we order a half of a grass fed steer. That is a lot of beef! And there is really only so much you can do certain cuts of beef, so we either end up with a ton of roasts or a ton of ground beef. This year we opted for the ground beef. My chest freezer is full and I need to figure out other ways to serve hamburger. There are only so many bowls of chili, sloppy joe and spaghetti with meat sauce a person can eat.

My husband is a big fan of all Asian foods and really enjoys the diverse flavors. He is particularly fond of Thai food so I decided to make a Thai inspired Paleo Red Curry Beef dish using my ground beef instead of the more traditional sliced steak.

  8. That is a lot of beef! We contemplated doing the same, but then joined a meat CSA instead. 15 lbs of mixed, grassfed meat every month, without taking up ALL the room in our freezer!

  17. Made this dish with friends and it was a hit.
I only used half an onion, though.
Also, would add coconut jasmine rice as a side.

  18. That sounds easy enough to make and I just so happen to have some red curry paste handy. 🙂

  19. I have made this recipe several times in just a few weeks and it is amazing. It is not complicated ,does not take a lot of time ,on hand ingredients and most importantly it tastes amazing. I topped fresh spinach with the finished product and it was great. Thanks

    • Hi Sue,
I’m so glad you have enjoyed the recipe. I love the addition of spinach, what a great way to add more nutrients to the finished dish. Thanks for stopping back by and letting me know.

  20. Made this a few nights ago and it was delicious. So hard to break old habits. As I was cooking my husband and I both kept saying this would be so good with some rice underneath or pita (so glad we’ve cleared te cupboards of that). Then, after we ate it we both said that was so good, who needs those carbs. That’s crazy 🙂 this is so easy and will be a weeknight regular, I’m sure. Thanks for sharing.
