I don’t always eat cupcakes for breakfast.

Sometimes I drink coffee.

Coffee Smoothie Substitutions

  • This recipe uses coconut milk but you can use whichever dairy you prefer (cows milk, chocolate milk, oat milk, almond milk, etc.).
  • You can add more or less coconut flakes depending on the sweetness level you prefer.
  • I like to add about 1/2 cup of ice but if you like a thicker smoothie feel free to add more.
  • A Tablespoon or two of almond butter would bump up the protein and be a delicious addition!

Rise and Shine Skinny Coffee Smoothie

My son celebrated his 7th birthday this week and I totally had cupcakes for breakfast. More than once.

Here’s a fun fact: My kid didn’t even eat a piece of cake at his own birthday party. I made super – crazy – awesome cupcakes with green and blue frosting piled high, and I had to coerce him to pose for a picture with one.

Naturally I had to eat all the frosted, leftover cupcakes. When those ran out I returned to my usual cup of coffee routine.

My usual cup of coffee is a splash of coffee with my cream and sugar. So I decided to add a few bananas and coconut milk for a more filling option. Throw in some Greek yogurt or use whatever milk your family drinks. Smoothie recipe rules are made to be broken.

And eat cake for breakfast. Sometimes.
