Sun-dried tomatoes made at home!

It feels silly to even call this a recipe. After all, there is no list of ingredients or cooking and baking, but share this, we must! Last year I read Saffron Trail’s adventure with sun-drying tomatoes at home and I knew we had to try it ourselves. With temperatures soaring in Bangalore this month, there couldn’t have been a better time to give this a shot.

This is what we did: we quartered about half a dozen or so tomatoes into slices, arranged them on a large platter, sprinkled some salt on them and put them in the sun. Everyday, for about a week, we would put the platter out in the balcony in the morning and move it to the refrigerator in the evening. Because we were too busy house-hunting on the weekend, they ended up not seeing any sun for two days, but that didn’t seem to matter much. Another day’s worth of sunshine and they were good to go.

Completely shriveled and sticky to touch, these sun-dried tomatoes have the most intense aroma. The little pieces Amber and I tried were as good as any we have tasted before. We’ve got this batch filled up in a jar covered with olive oil. I cannot wait to use them—the flavoured oil and sun-dried tomatoes should bring some serious sparkle to a simple spaghetti aglio e olio dinner.
