No-bake peanut butter and oats snack bites

I love peanut butter. Be it in cookies, milkshakes or simply spread over bread, peanut butter comes closest to what for me has been an elusive concept of comfort food. I am often reminded of this episode in Friends  where Joey suggests an appetizer called ‘peanut butter fingers’ and proceeds to explain it by simply dipping his fingers in an imaginary jar and licking it. While I did not often relate to Joey’s heavily Americanized version of an Italian obsession with food, this was something I could totally get on board with.

In a little over a year that we have been blogging, we have found  quite often that some of the nicest food preparations are so good because of how simple they are to make. These chocolate peanut butter balls would rank high on that list.

Peanut butter and oatssnack bites
Adapted from How Sweet It Is
(makes 30–40)

2 cups rolled oats
1 cup puffed rice
1 cup grated dark chocolate
¾ cup creamy peanut butter
½ cup roasted peanuts
Honey, to taste

1. Peel the roasted peanuts, crush them coarsely and set aside.

2. Mix the oats, puffed rice and grated chocolate in a large bowl. Add the peanut butter, one spoon at a time mixing as you go along till the whole thing turns into a sticky mixture.

3. Add honey to taste. Depending on how much sugar your peanut butter and chocolate has, it could be anywhere between a quarter to half cup.
4. Roll the mixture into balls of an inch and quarter diameters and roll the balls in ground peanuts.

5. Store in an air-tight container in the refrigerator for up to 2 weeks.
