Strawberry Clotted Cream Ice Cream
Delicious strawberry ice cream made with clotted cream. This is by far the best ice cream I have ever tasted thanks to the rich and creamy Cornish clotted cream, and the plump ripe sweet strawberries.
The school term has officially finished so all my 3 kidlets are at home until September, and are eating me out of house and home.
They all claim to ‘hate’ on school, but I know from experience that it won’t be long before they’re whining and complaining they’re bored, and want to go back to school! 😆
Did I mention that my middle daughter, the monkey, will now be going to high school *gulp* in September? I feel old! #imnotreadyforthat
And this time next year, so will my youngest!
Pretty much every day when they come home from school, they drop their bags at the front door and run to the kitchen demanding food. When I say food I mean desserts, sweet treats and crisps (potato chips). You’d think they weren’t even fed during school!
And now they’re home, the food fest is just constant. These kids could just eat, eat and eat more until they were sick, but they don’t get sick because they’re used to it! They must have an extra stomach or something, a dessert stomach.
And let’s not even talk about taking the kiddos food shopping. I thought the pestering stage was for the younger kids. Wrong! A very expensive mistake later we arrived home with a boatload of shopping, but I managed to smuggle in a couple of packs of delicious clotted cream in there amongst the sea of kiddy goodies.
Have you even heard of clotted cream? OMGosh, it’s the best thing ever. Move over double (heavy) cream because clotted cream has got your back! Anything with 55% butterfat [yes, you read that right – 55%] has got to be good! Maybe you didn’t want to read that after all. *shuffles awkwardly*
Clotted cream, or Cornish cream/Devonshire cream as it is traditionally known, was traditionally made in rich pastureland that is Cornwall, Devon, England. It is insanely thick, rich and utterly irresistible!
Clotted cream is great spread on scones with a little jam. Now you know why tea rooms were so damn popular back in the day (and still today) as they always served their tea with scones, jam and clotted cream.
It’s also amazing in something else too… You guessed it: ICE CREAM!
This ice cream is made with that amazing cornish clotted cream with plump, sweet and juicy strawberries swirled through. I was absolutely blown away at how delicious, creamy and fruity this ice cream is. It was literally love at first bite, I’m not kidding here!
The kiddos love this strawberry clotted cream ice cream too. I haven’t been able to stop shovelling this in my mouth. It’s also tons better than the branded version.
Strawberry Clotted Cream Ice Cream
Delicious strawberry ice cream made with clotted cream. This is by far the best ice cream I have ever tasted thanks to the rich and creamy Cornish clotted cream, and the plump ripe sweet strawberries.
Ingredients
- 2 large eggs
- 125g (½ cup + 1 tbsp) caster (fine) sugar
- 2x 227g tubs clotted cream, see notes
- 250ml (1 cup) full-fat milk
- 250g strawberries, hulled and halved
Instructions
- Whisk the eggs on a large bowl until light and frothy. Gradually add the sugar and whisk for a further 3 minutes, then add the clotted cream and the milk to the egg mixture and whisk well.
- If using an ice cream maker, spoon the mixture into an ice cream maker and freeze according to the manufacturers instructions. (skip to step 4).
- If you’re not using an ice cream maker, spoon the mixture into a 2-litre freezer proof container, freeze for 3 hours and whisk until smooth, then freeze for a further 3 hours. Repeat this process 3-4 times, then freeze for 2 hours or until semi-solid.
- Put the strawberries into a food processor and process until nearly smooth with a few larger pieces for texture. When the ice cream has started to freeze but is still soft, gently fold through the strawberries to create a rippled effect. Transfer to a freezer proof container and freeze until solid.
- When ready to serve, remove from the freezer for 5 minutes, or until slightly softened.

My friend in the US said you should be able to find the clotted cream in the larger supermarkets. And girl, clotted cream blows double (heavy) cream right outta' the water! It's sooooo good.

It's hard to put into words just how creamy this ice cream is. Think heavy double cream, then remove some of the water to make like a condensed type of cream, and imagine that but more of it in this ice cream. Heavenly.

Gosh, high school! How scary is that! I can still remember my first day, lucky them that they get to come home to this sort of pud!
Oh I know, Emma. I'm terrified for her starting secondary school, and I remember my first day too. It's so good that their school does induction type days. She's visited the school twice before, and her actual first day in September they only have the new starters in for a day to help them settle in.

OMG Thank you so much for this recipe! I'm allergic to so many ingredients that I can not buy store bought ice cream, and I've been craving Kelly's of Cornwall clotted cream ice cream so badly. I live in Canada and obviously can't get it here. I make my own clotted cream (so easy btw) so I tried this recipe out 2 days ago and I'm in LOVE!!!! I made 1 batch with no strawberries, and 1 batch without. It's so good, and really close in taste to how I remember Kelly's of Cornwall tasting. Super easy to make, and so freaking delicious.
