Breakfast cookie dough!
Do you like cookie dough?
Before this year, I’d never met someone who said no to that question. Salmonella or not, unbaked, gooey cookie dough has to be one of the best foods out there. I think that’s pretty much universally agreed.
So, imagine my shock when I was baking cookies at my friends house, decided to taste the batter, and my friend said she’d NEVER EATEN COOKIE DOUGH. In her life! I had to stare blankly to comprehend this startling revelation for a few moments.
“Do you want to try some?” I asked her.
Her response: “Doesn’t it have raw egg in it?”
(Well, that’s completely besides the point… :-/)
The beauty of this cookie dough recipe is that there is no raw egg! Plus, you can (and should!) eat the ENTIRE RECIPE for less than 200 calories! Well, there would probably be more depending on how many chocolate chips you use. But that, like salmonella, is also besides the point.
Breakfast Cookie Dough
Ingredients:
- 1/2 cup oats (40 g)
- 1 Tbsp coconut flour
- 1 Tbsp erythritol or other sweetener
- 1/2 tsp vanilla extract
- 1/16 tsp salt
- pinch stevia extract (optional, for more sweetness)
- Chocolate chips galore!
Directions:
The night before, cook the oats according to directions. Cool in the fridge overnight (You can skip this if you want hot cookie dough). Using a food processor or hand blender, puree oats and remaining ingredients (except chocolate chips) together. Add chocolate chips and serve!
(Does not include chocolate chips)
Only 190 calories for such amazingness?! Not to mention only 4 grams of healthy fat, 7 grams of fiber, and 7 grams of protein! You should totally eat this for breakfast. I did 🙂

How much liquid do you cook the oats in please? And do you suggest milk or water? Thanks!
I wrote to cook them as directed because different types of oats will require different amounts of liquid. For rolled oats (NOT instant or steel cut) I would use about 1 cup liquid. I would also use water because milk has a tendency to burn. Hope this helps!
