American Flag Pie (blackberry and strawberry)

I didn't think pie could get any more American, but now I think it has outdone itself. This mixed berry pie is decorated like the American Flag and is perfect for the 4th of July!

I love all the creative ideas there are using red white and blue for a patriotic dessert. This pie being one of them! I thought I had missed my chance at posting a cute flag-themed dessert this year, but I managed to squeeze this in in the knick of time. This flag pie is so simple, easy, and fun!

You can use a store-bought crust and even canned filling if you'd like. That will save you time, giving you no excuse not to make this! I made my crust and filling from scratch, and provided the recipe below. 

The trick is to create a barrier with foil before you fill the pie. After you fill the small wedge with the blackberries (or blueberries), you fill the remaining 3/4 of the pie with the strawberries (or cherries!). Then remove the wedge, and viola! Simply cut stripes and use a cookie cutter to cut out stars, and assemble them on the pie. Don't have a star cookie cutter? Cut them by hand! Or forget the stars and go with something abstract- polka dots would look cute. Watch how I made it in the video.

My tips for baking this pie:

-when you preheat the oven, place a parchment-lined cookie sheet in the middle rack to preheat as well. When the pie is ready, place it on the cookie sheet already in the oven. This will catch the drips, but will be hot already to help cook the bottom of the crust.

-Don't take the pie out of the oven until the juices are thick and BUBBLING! Then it must cool for a couple hours to thicken even more. If you take it out before the juices thicken enough, it will be very liquidy.

American Flag Pie (blackberry and strawberry)
An easy and delicious blackberry and strawberry pie decorated like the American Flag.
Ingredients
  • 2 1/2 cups flour
  • 1 T. sugar
  • 1/2 tea. salt
  • 1 cup (2 sticks) butter, cold and cubed
  • 1/4-1/2 cup ice cold water
  • 4 cups strawberries, washed, hulled, and sliced
  • 2 cups blackberries, washed
  • 1/2 cup sugar
  • 5 T. cornstarch
  • 3 tea. lemon juice
  • 3/4 tea. salt
  • 1 egg
  • 1 T. heavy cream
Instructions
1. Prepare pie crust in a food processor by pulsing dry ingredients together first. Mix in cold butter cubes and pulse until the chunks are about the size of peas. Pulse in cold water just until the mixture begins to come together, and can hold together when pinched.2. Divide dough, and create two disks. Cover in plastic wrap and refrigerate for 30 minutes.3. Preheat the oven to 375°F. Prepare the two fillings. In a small bowl, mix blackberries, 1/4 cup sugar, 2 T. cornstarch, 1 tea. lemon juice, and 1/4 tea. salt. Set aside.4. Prepare strawberry filling in a large bowl by mixing strawberries, 1/4 cup sugar, 3 T. cornstarch, 2 tea. lemon juice, and 1/2 tea. salt. Set aside.5. Roll out two separate discs of pie dough. Fill the bottom of a pie plate with one of the pie crusts.6. Create a divider out of foil, bent at 90°, and place it inside the pie plate. Fill the small area it creates with blackberry filling. Fill the outside area with the strawberry filling, and adjust as needed before pulling out the foil.7. With the second pie crust, cut out stripes, and stars with a cookie cutter. Assemble on top of the pie fillings with stripes over the strawberries and stars over the blackberries.8. Whisk heavy cream and an egg together, and paint onto the pie crust. Sprinkle with sugar if desired. Bake for 45-55 minutes, until filling is bubbling and crust is golden brown. Use foil to shield the edges if they begin to brown too quickly while baking. Let cool completely, about 4 hours before serving. Enjoy!
