Crunchy Coconut French Toast

Indulge in a sweet, coconuty breakfast! Shredded coconut & corn flakes adds a crisp crust. Because who has the time to cook something fancy in the morning? Ummm not me! As much as I love cooking, weekday mornings are better off with a quick & easy breakfast.

So today hubby decided to work from home, I’m the happiest when he stays home in the middle of the week. It means no waking up early & no packing a lunchbox . And a good wholesome breakfast together..

I had been dreaming about this coconut crusted french toast with coconut syrup. Ever since we ate in a cafe on our trip to Hawaii. I’ve been on quite the coconut kick lately,  using coconut everywhere I can. So I just had to make it now!

The french toast get’s it’s crunch from crushed cornflakes. It really gives a nice texture. Drizzle with lot of maple syrup & eat away!

 Here’s how you can make it too:

Ingredients:

  • 6 thick bread slices, I used Italian loaf
  • 1/2 cup 2% or whole milk
  • 1/4 cup heavy cream
  • 3 large eggs
  • 1/4 tsp vanilla extract
  • 2 tbsp sugar
  • 1/4 tsp cinnamon powder
  • 1/2 cup corn flakes
  • 1/2 cup dry coconut flakes
  • Sliced strawberries for garnish
  • Sliced almonds for garnish
  • Maple syrup

Method: 

  • In a bowl add eggs, milk, cream, sugar, vanilla extract & cinnamon powder.
  • Mix till everything is well combined.
  • Add corn flakes & coconut flakes in a zip lock bag and crush them with your hands or a rolling pan. Set them aside.
  • Pre-heat a griddle OR non-stick skillet to low to medium heat.
  • Dip each slice of bread into the egg -milk mixture for 15-20 seconds per side.
  • Then dip the slices in the shredded coconut on both sides for an even coat.
  • Add butter on the skillet & cook for 1-2 minute on a low heat per side. Watch for a crispy golden-brown crust. The coconut may turn a deep brown, but avoid BLACK! If the coconut burns before the crust has formed, turn the heat down a little.
  • Serve with fresh strawberries & maple syrup.

  • 1/4 tsp cinnamon powder

Notes:

  • I used Italian bread. But you can use any bread of your choice.
  • You can add coconut milk, instead of regular milk for more flavor.
  • You can use any type of corn flakes u like. I used strawberry dusted corn flakes
