Strawberry Yogurt Popsicles

I’m walking into the weekend with these sweet and tangy popsicles that are made from greek yogurt and strawberries. Each popsicle is dressed with sweet honey that blends seamlessly with the yogurt topped with blueberries, mint leaves and crumbled granola. You can alter the sweetness by adding less or more sugar into the compote keeping in mind that the honey adds sweetness in the end as well. These popsicle are a healthy option for the start of June. ingredients

  • 2 cups Strawberries
  • 2-3 tablespoons sugar
  • 3-4 tablespoons orange juice
  • 1 cup greek yogurt
  • 1/2 teaspoon vanilla extract
  • 1/2 teaspoon lemon juice
  • mint leaves
  • blueberries
  • crushed granola
  • honey

Directions

Begin by making the strawberry compote. In a saucepan, heat the orange juice and sugar so it dissolves. Add in the chopped strawberries and let it cook for about 10 minutes. Gently crush the strawberries with a wooden spoon while it cooks. Remove to side and let it cool.

In a bowl, mix the greek yogurt, vanilla extract and lemon juice together. In the popsicle moulds, first add the strawberry compote and then add in a spoonful of yogurt on top. Place into a freezer for at least 3 hours until it becomes solid.

Garnish each popsicle with a drizzle of honey, fresh mint leaves, blueberries and crushed granola or nuts of choice.
