This is perhaps the most non-recipe recipe I’ve ever shared, except it exemplifies how unexciting things have been around here. January was slow and uneventful for me, and I’ve thankfully trudged through it without fading away from the monotony and damp, grey skies.

I haven’t cooked a lick in the past few weeks, not properly anyway. I’ve been subsisting on meals we’ve hastily cobbled together and granola.
Oh the granola! I’ve eaten so much granola lately I’ve had to come up with some creative ways to infuse variety into our breakfast routine. This is where these spiced baked apple slices come in; coincidentally, they were also how I managed to break my daily granola habit.

Baked fruit is a simple way to use up fruit, and a technique I employ often throughout the cold-weather season when I have a lot of apple and pear. It’s great scooped over yogurt and granola, oatmeal and other hot cereals.

I found a bag of coconut flour that was just about to expire; so I’ve been giving these baked apple slices a whirl with coconut flour porridge and peanuts – I like very much!

These tender caramelized slices of apple (and pear!) make a wonderful dessert too, it’s a nice complement to ice cream. You’ll love the warm and cozy smell of apples and spices when the it’s baking.

Spiced Baked Apple Slices
Delicious and easy Hasselback-style baked apples, enjoy with yogurt topped with granola, oatmeal or with ice cream as a dessert.

INGREDIENTS
  1. 3 tablespoons maple syrup
  2. 3 tablespoons vegan butter, melted and cooled
  3. 1/4 teaspoon ground cinnamon
  4. 1/4 teaspoon grated nutmeg
  5. 1/4 teaspoon ground cardamom
  6. Pinch of ground cloves
  7. Pinch of sea salt
  8. 2 – 3 large apples (like Gala, Honeycrisp or Braeburn)
DIRECTIONS
  1. Preheat oven to 400 degrees F. and lightly grease a skillet or baking dish
  2. In a small bowl, combine maple syrup, melted butter, cinnamon, nutmeg, cloves and salt; stir together and set aside
  3. Wash and peel apples, cut each in half from the stem and remove core
  4. Cut apple in slices (flat-side down) leaving the bottom intact
  5. Transfer apple to prepared skillet or baking dish and brush generously with maple syrup and butter mixture, over the top, between slices and underneath
  6. Cover skillet or baking dish with aluminum foil and bake for 30 – 35 minutes, until apples are tender.
  7. Let apples cool for 5 – 10 minutes before serving
  8. Enjoy!
