Easy Lime, Mint and Lemongrass Vegan Summer Cooler

Mood: I’m in Mumbai right now & it’s safe to say that..SUMMER is here! Soaring temperatures, piercing sunlight, parched throats. It’s all happening, right here, right now. Seriously, it’s ridiculously hot at the moment, & all I want to do is just laze around in a cool, dark room & sip on ice cold beverages, all day long. Sounds good doesn’t it? Well, here’s a little something to get you started on your Summer routine:) This Easy Lime, Mint & Lemongrass Vegan Summer Cooler is extremely simple to make & it’s definitely a crowd pleaser for all those hot & sunny days:) All you need is a few fresh ingredients & you’re all set:) I used fresh Lemongrass leaves, growing in my very own kitchen garden:) It’s just a small thing, but it made me incredibly happy:) Whether you want to make a few glasses or a whole jug, you can just stock up on this homemade drink in your refrigerator & sip it all day long:) Fresh. Sweet. Citrusy. Minty. Refreshing. Perfect Summer Happiness:)


Furry Friend Advice: If you’re having a hard time dealing with the summer heat, then, just try & imagine the plight of our furry friends. If you have pets, please make sure you keep them indoors during the day time, preferably in a cool, dark & air conditioned room. Make sure you regularly refill their water bowls with cool fresh drinking water. Also, avoid taking them for walks when it’s extremely hot, because the hot pavements can be really harmful for their sensitive paw pads. The best times for walks are early mornings, late evenings & at night:) And most importantly, please place a bowl of cool fresh water outside your house/on the road, so that stray animals & birds can also stay hydrated during the summer heat. Time: 5 Minutes Prep Time + approx. 2 hours Infusing/Chilling Time
Serving Size: 2 cups

Ingredients:
• 2 cups Water
• 3 tbsp fresh Mint Leaves
• 2 tsp fresh Lemongrass Leaves (chopped)
• 2 tsp Lime/Lemon Juice (freshly squeezed)
• 3 tsp Unrefined Brown Sugar (vegan)*
• 5-6 Ice Cubes (optional)

Method:
1. Boil 2 cups of water & add the fresh Mint leaves & Lemongrass to the hot water. Cover the bowl/vessel & let the flavours infuse for about 45 minutes – 1 hour.

2. Once the flavours have infused properly, add the lime/lemon juice & brown sugar to the infused water & stir well. Once the sugar has dissolved & the ingredients have been combined properly, place the bowl/vessel in the refrigerator. Let the infused mixture chill in the refrigerator for a minimum of 1 hour. The longer, the better:) If you’re in a hurry, you can also pop the bowl into the freezer, so that it cools down faster:)

3. When you’re ready to serve the cooler, pour the cold drink into glasses & add a few ice cubes (optional). Make sure you serve the drink with the infused Mint & Lemongrass leaves:) There’s something wonderful about feeling the minty freshness of the leaves on your lips, while you sip this refreshing cooler:) And voila! Notes:
You can also also use Jaggery Powder or Maple/Agave Syrup, instead of Unrefined Brown Sugar. Adjust the quantity of the sweetener, according to your preference:)
