Directions

1. To make the grilled corn: Melt butter in a saucepan over medium heat. Add garlic and cook until soft and fragrant, 30 seconds to 1 minute — be careful not to burn the garlic. Remove the mixture from heat. Add Worcestershire sauce and stir the mixture gently.

2. In a skillet, melt 1/2 tablespoon butter and cook corn for about 2 minutes over medium-high heat, stirring occasionally. Stir in the butter mixture and continue cooking until corn is cooked and slightly charred, about 8 minutes.

3. Remove from heat. Sprinkle corn with grated Parmesan cheese and parsley, serve the grilled corn immediately or chilled. Enjoy!

Can we use frozen corn for this recipe?

We like to use fresh corn to make this grilled corn recipe but yes, frozen corn can replace fresh corn in most recipes where fresh corn is called for. But if you plan to make this grilled corn ahead of time, keep in mind thawed corn will last shorter and can get mushy if you wait too long before cooking it.

How to choose fresh corn

The easiest way to choose an ear of corn is to take a quick look: peel down a bit of the husk and check for bright yellow, plump kernels. But since doing this can get you angry stares at the grocery store or the market, here’s how to choose corn without peeling the husk:

  • Check out the color of the husk. If it’s a bright green and tightly wrapped against the cob, then the corn is fresh.
  • Feel the kernels through the husk. The corn kernels should be plump and plentiful.
  • Look for small brown holes in the husk, especially towards the top. Those are wormholes, and, of course, worms are best left alone doing their business.
  • The tassels (those things sticking up out of the top) should be brown and slightly sticky. If they’re dry or black it means the ear of corn is old and stale.
  • As tempting as it might be, don’t peel back the husk. This shortens the shelf life of the corn, causing it to dry out.

Grilled corn recipe variations

  • Use feta instead of parmesan: Add crumbled feta for a creamier, cheesier texture.
  • Add black beans and/or diced bell pepper.
  • Add avocado and tomato and you have a full fledged summer corn salad you’ll enjoy all the season!
