Ingredients:
Nice Cream
• 2 frozen chopped Bananas (approx. 1 cup)
• 1 1/2 tsp Instant Coffee Powder

• 1/3 cup Almond/Coconut Milk*
• 3 tbsp Cocoa Powder

Garnish (Suggestions)
• Fresh Berries
• Cocoa Nibs/Dark Chocolate (Vegan)
• Nuts

Cropped

Method:
1. Chop 2 medium sized bananas into bite sized chunks & freeze them overnight/at least for 10-12 hours. It’s important to ensure that the bananas are fully frozen, because the icy-ness will give the dessert a chilled  ice cream like texture:) A perfectly frozen banana is the key to a simple & delicious nice cream:) If the bananas are not frozen properly, then the dessert will have a more milkshake like texture (which is also delicious). I always have frozen bananas in my freezer & sometimes, I leave them in there for days/weeks:) That way, I always have them ready when I need them:)

2. Add all the nice cream ingredients to a blender/food processor. Blend the ingredients until they form a nice & creamy ice cream mixture. Do a taste check & adjust the flavours according to your preference:) If you’re not a big fan of coffee, don’t worry! The coffee powder is just used to intensify the chocolate flavour & you can’t really taste any coffee in the final nice cream:)

3. Scoop the nice cream into serving bowls/glasses & garnish with your favourite toppings:) I added Pecans & Dark Chocolate chunks:) And voila! Your  Vegan Chocolate Banana Nice Cream is ready:) The nice cream is best served chilled & best consumed immediately, because otherwise, it will melt & lose it’s frostiness (just like ice cream!). In case you can’t devour all of it in one go (hey, I’m not judging you), then just freeze the rest & enjoy it later:) Remember to defrost it/leave it out for about 5/10 minutes, before eating it again:) Bon Appétit:)

Notes:
*I’ve tested this recipe with Almond/Coconut Milk & while they both work, I prefer Coconut Milk:) The creamier the milk, the better the nice cream texture:) If you want a super icy texture or if your nice cream turns out too soft/milkshake like, then you can skip the Almond/Coconut Milk altogether:)
