Monk Fruit-Sweetened Chocolate Zucchini Muffins
These low-carb triple chocolate zucchini muffins are sweetened with my favorite keto-friendly product, Lakanto Monk Fruit Sweetener. I use monk fruit sweetener in virtually all of my dessert, baked good, and fat bomb recipes as it is net-carb-free, calorie-free, and tastes just like sugar!

How To Make Low-Carb Triple Chocolate Zucchini Muffins
Preheat your oven and line muffin tin with muffin liners. Measure out dry ingredients.
Grate zucchini using a grater or pulse in a food processor. Squeeze out excess moisture using a nut milk bag or a cheesecloth.
Measure out wet ingredients.
To a large mixing bowl, add dry ingredients and whisk together.
Add eggs and vanilla and mix with electric mixer.
Melt together butter (or coconut oil for dairy-free) and Baker’s chocolate.
Add melted chocolate and mix with electric mixer.
Add grated zucchini and mix again.
Spoon mixture into muffin liners and top with chocolate chips.
Bake until toothpick can be poked into center of muffins and come out cleanly.

Description
These Low-Carb Triple Chocolate Zucchini Muffins are a delicious keto-friendly baked good that are perfect for curbing your sweet tooth and your craving for chocolate! This recipe is low-carb, keto, nut-free, dairy-free, soy-free, gluten-free, grain-free, vegetarian, refined-sugar-free, and contains only 4.5 grams of net carbs per serving!
Ingredients
- 6 oz zucchini
- 1 cup classic monk fruit sweetener (use code “REALBALANCED” for 20% off Lakanto brand products!)
- 1 cup coconut flour
- 1/3 cup unsweetened cocoa powder
- 2 1/2 tsp cream of tartar
- 1 tsp baking soda
- 1/2 tsp espresso powder
- 1/4 tsp salt
- 1/4 tsp xanthan gum
- 7 large eggs
- 3/4 tsp pure vanilla extract
- 1.2 oz 100% Baker’s chocolate
- 5 oz unsalted butter or coconut oil for dairy-free
- 3 tbsp 100% cocoa chocolate chips

- Preheat oven to 350 degrees and line muffin tin with 12 muffin liners.
- Grate zucchini using a grater or pulse in a food processor. Transfer grated zucchini to a nut milk bag or cheesecloth and squeeze to remove excess liquid. Set aside.
- To a large mixing bowl, add dry ingredients and whisk together. Add eggs and vanilla and mix with an electric mixer.
- Chop Bakers chocolate into slivers. Add chopped chocolate and butter (or coconut oil) to a small bowl and heat in the microwave in 25-30 second increments until melted. Add melted chocolate to mixing a bowl of mixed dry ingredients, eggs, and vanilla. Mix with an electric mixer, then add grated zucchini, and mix again. All ingredients should be well incorporated.
- Spoon mixture into muffin liners (the mixture will be quite thick). Add chocolate chips to the top of muffin dough.
- Bake until a toothpick can be poked into the center of muffins and come out cleanly about 18-20 minutes.

For the 6oz of Zucchini, is the measurement of 6oz before or after squeezing out the liquid? Also, what can I use instead of Xanthan gum?

Do I have to use xanthan if I use almond flour?

Hi, Debbie! Almond flour will not work at a 1:1 substitution ratio for coconut flour here (they are never a 1:1 sub for each other). I cannot say how much almond flour you’d need as I can’t test this due to my allergies. Regardless though, yes, you’d still need to use xanthan gum.

Can I sub swerve for monk fruit? Can I use instant coffee instead of espresso powder? Can I leave out bakers chocolate and just add more chocolate chips?

Yep, you can sub Swerve in for monk fruit sweetener at a 1:1 ratio. Instant coffee and espresso powder are quite different in their potency, but subbing instant coffee in shouldn’t affect the recipe being successful, it just won’t have the exact flavor that the original recipe was developed to yield. And, yes, you can use more chocolate chips in place of Baker’s chocolate. Enjoy!

I personally love the bitterness of dark chocolate, but if you don’t, you could always sub in your favorite low-carb chocolate chips if you’d prefer.

4.5g net carbs per muffin. The net carb content of my recipes are always written several times throughout the post. Otherwise, you can calculate it yourself by following the equation in the nutrition label disclaimer (total carbs – fiber – sugar alcohol = net carbs).
