From Animagus Eats: Happy Healthy Vegan Valentine’s Day:)

Time: 5 minutes (+ 8-10 hours Chilling Time)
Serving Size: 2 servings*

Ingredients:
• 1/4 cup + 1 tbsp Chia Seeds
• 1 cup Plant Based Milk*
• 2 cups Strawberries (chopped)
• 2 tbsp Maple/Agave Syrup (to taste)*
• 1/4 cup Pomegranate Seeds
• Garnish: Unrefined Brown Sugar, Fresh Berries, Cocoa Nibs, Nuts, etc. (optional)

Method:
1. Add the chopped strawberries & the plant based milk to a blender/food processor & blend until smooth & well combined.

2. Add the chia seeds & the maple/agave syrup to the strawberry mixture & combine well. I just added it straight to the blender; who wants to wash more dishes right?:) Do a taste check & if you have a sweet tooth, add more maple/agave syrup if needed:)

3. Time to plate this baby up! Pour 1/4 cup of the chia seed mixture into a serving bowl/glass & then sprinkle on a layer of pomegranate seeds. Repeat once or twice till the bowl/glass is full. Save some pomegranate seeds for the garnish as well:) 

4. Refrigerate the Chia Seed Pudding for 8-10 hours/overnight.

5. Once the Chia Seed Pudding is ready/set, take bowls/glasses out of the fridge & garnish with the remaining pomegranate seeds & your toppings of choice:) I would suggest a sprinkle of unrefined brown sugar/coconut sugar, fresh berries, cocoa nibs, nuts, etc:) You can also use fun colourful sprinkles (not sugar free though!) for decoration:) And voila! Your Strawberry & Pomegranate Chia Vegan Seed Pudding is ready to be served! Bon Appétit:)

Notes:
*This recipe creates up to two small serving bowls/glasses. Adjust the amount across each of the bowls/glasses so that there’s enough for everyone:)
*I recommend using a thick/creamy plant based milk to get the best results. I’ve used Almond Milk, Coconut Milk & Pea Milk for the recipe in the past:)
*If you don’t have maple/agave syrup, you can use unrefined brown sugar/coconut sugar, jaggery powder/syrup, etc:)
