If there is one thing I can eat often (besides brownies) it is Mexican food.  

The chips, guacamole, salsa, warm tortillas, beans, AND….  The endless delicious meals.  I mean, I could go on.  However, when you don’t eat meat or dairy what is there left to enjoy?

You GUYS!  SO SO SO much!

At a Mexican food restaurant it can be a little tricky but there are some options that can still fit my lifestyle. BUT at home, the options are endless.

Insert these black bean and sweet potato enchiladas 

With only a few ingredients you can create your own enchiladas feast at home in less tha 30 minutes.

Details of the Recipe

Sauce:  Making your own sauce at home is easy to do however in this recipe I use a can.  If you have a homemade recipe that you love, use it and enjoy it but you will be just fine with a can of your favorite brand.

Inside mixture:  Yummm… beans, sweet potatoes, onions, and spinach. The best kind of combo and it works well in these enchiladas but if you are interested in something else like squash, zucchini, or regular potatoes then go for it.  

The tortillas:  I used corn tortillas but flour would work ok if that is what you have on hand.  To roll them up easier, warm the tortillas up in a wet paper towel in the microwave for 15 seconds.  

The toppings:  Cheese lovers, I highly encourage you to try these without cheese and see what you think. I topped mine with vegan sour cream (DELICIOUS!)  but you could also mix avocado with the sour cream to make it a little bit creamier. Instead, just top it with avocado slices.  Either way, this will be tasty!  OH and don’t forget your cilantro and green onions.
