While spending a few days away in a little village called St Lunaire which is near the ferry port of St Malo in Northern Brittany, France. The most memorable meal was a Honey and Lime Dressing with a scrumptious salad.
After a period of traveling on business for several weeks of quality time with the family was urgently needed as we were becoming strangers. We decided to channel hop for a few days to get away from it all, to kick back and relax.
The French Connection
The quaintly beautiful, the little town overlooks the English Channel, reminding you of the Cornish Coast, the town has a few outstanding restaurants. It was late autumn the town was very quiet with very few tourists like ourselves. There was one restaurant in the main street that only boasted five tables that were always full of local people. This is always a good sign and usually meaning you were in for a treat. Seeing an empty table available, we were told no they were full. The husband is the chef, the wife runs the front of house. They only shop for enough food for the five tables as the essence of the restaurant was local produce that was perfectly fresh. What a pleasant surprise after so many restaurants trying to squeeze as many covers as possible into an evening.
Honey and Lime Dressing
Perfect on any salad, this dressing is light and refreshing. It has the refreshing tang of lime juice with a hint of sweetness from honey and a touch of coriander to complement the other flavors
Ingredients
- 2 tbsp Extra Virgin Olive Oil
- Juice and Zest of a Whole Lime
- 1 Tsp Runny Honey
- 1 Small Red Chilli ( deseeded and chopped)
- 1 Handfull Fresh Coriander (Cilantro) (Chopped)
- 1 Handfull Fresh Flat Leaf Parsley (Chopped)
- Sea Salt and Ground Black Pepper to taste
Instructions
Whisk all the ingredients together in a bowl until they are well combines
The longer you leave the Honey and Lime Dressing to stand the more the flavors intensify. Your call.
The Honey and Lime dressing works with most cold foods and salads. As the flavor is so fresh it brings even the simplest of dishes to a new level of yum.
