This Mushroom Rice is fluffy with caramelized mushrooms, onion and garlic paired with a flaky, baked, sweet chili salmon has easily become a favorite of mine that can be thrown together in 20 minutes!
I am always on the hunt for easy meals. Contrary to popular belief, just because a recipe contains a few simple ingredients, doesn’t mean it’s tasteless! This dish has flavor, texture and personality so to speak.
The star of this recipe really is the stellar mushroom rice side dish. I used VeeTee Basmati Rice which can be made in 2 minutes flat… how can you beat that?! I love VeeTee rice because it’s not only convenient, but is made with no artificial flavors or preservatives.
This side dish would go so well with chicken or steak but this time around I paired it with a baked chili salmon and the flavor combination was pretty mind blowing!
What really pushed this mushroom rice over the edge was the toasted sesame oil. The sesame oil gives it a flavor that is comparable to an Asian dish which is why I think it goes so well with the sweet chili salmon.
Ingredients for Easy Mushroom Rice
VeeTee Rice & Tasty Basmati Rice
Mushrooms
Onion
Fresh Garlic

This dish is easy enough to be made throughout the week but special enough to be made for a dinner party or special occasion like a holiday dinner. But the question I know I will get… can you make it ahead of time? Well of course you can! We all know how much I love to meal prep. Make a big batch of this rice dish and store it in an air tight container in your refrigerator for about a week. You’ll have a delicious side dish all week long to pair with a protein of your choice.

This healthy and easy meal can be whipped up in just 20 minutes and is jam packed with flavor!
Ingredients
For the salmon:
2 Salmon Filets
Sweet Chili Sauce (bottled)
Salt
Pepper
Garlic Powder
For the rice:
VeeTee Rice
10oz Mushrooms
1/2 White Onion
2–3 cloves of Garlic or 1 Tbsp minced
1–2 Tbsp Sesame Oil
Salt
Pepper
Garlic Powder
Instructions
- Pre-heat your oven to 450 and while it’s heating up, season your salmon with salt, pepper and garlic powder. I used about 1 teaspoon of each but feel free to eye ball it. Once your salmon is seasoned, brush your sweet chili sauce onto the salmon generously. Place your salmon on a foil lined and greased baking sheet and place in the oven once it’s at 450 for 20 minutes.
- While your salmon is baking, heat a skillet on the stove top and spray with any type of cooking or oil spray. Slice your onion and add to the pan with 2-3 cloves of sliced garlic or 1 Tbsp minced garlic. Let cook for 2 minutes, stir it up while it cooks, and then add the mushrooms.
- Once your mushrooms are 3/4 of the way cooked, add your VeeTee Rice, 1-2 Tbsp sesame oil and your salt, pepper and garlic powder (about 1 teaspoon of each). The rice will be cooked within 2 minutes, continue to stir your mixture until well combined and the rice is heated through.
- Level up this dish by finishing it off with chopped fresh parsley and a sprinkle of grated cheese!
