To celebrate the Chasing Victory cover reveal, I’m sharing my insanely delicious recipe for vegan black bean brownies. You would never suspect that they are as healthy as a brownie will ever be because they are so decadent. I take my dessert really seriously, so you know that I’d never steer you wrong.

I have so many new books coming out this year and I’m really excited. It’s been a wild and wacky ride trying to get everything done with a new baby. I only work when he’s napping or sleeping because I want to soak up every precious moment when my son is awake. This means that I am sleep deprived, but happy.

It’s been a lot longer than planned since I released Sweet Redemption. I promise that I will never go so long between new releases again. I was busy signing with an agent, and being pregnant and navigating newborn life, all while in a pandemic. Whew! But I’ve found balance and am starting to feel productive again.

Vegan Brownies

Vegan black bean brownies

These vegan black bean brownies are fudgy, decadent and delicious. No one will suspect the secret ingredient! This recipe is as easy as throwing everything in a blender.

This recipe makes 9 brownies.

Ingredients

1 15 ounce can of black beans, drained and rinsed
3 tablespoons of Dutch process cocoa powder
1/2 cup of oats
1/3 cup of maple syrup, honey, agave or liquid sweetener of choice
2 tablespoons of bitch xylitol or granular sweetener of choice
1/4 cup of coconut oil
1 tablespoon of vanilla extract
1 teaspoon of baking powder
1/2 cup of chocolate chips

Directions

  1. Pre-heat the oven to 350° F.
  2. Combine all ingredients except for the chocolate chips in a food processer or blender and blend until smooth.
  3. Stir in the chocolate chips. You can add more to the top if you want pretty brownies. You can also add other toppings, like sprinkles or coconut.
  4. Bake for 15 minutes and let them cool for about 30 minutes. You can eat them right away or refrigerate overnight for the best texture.
