If you get access to fresh or frozen moringa stalks, use them in the soup. The pulp gives you a thicker consistency. Here I am using Moringa powder to make the soup and enhance the flavor with garlic, onion, and tomatoes.

Ingredients
  

  • 3 cups water
  • 3 tbsp Moringa powder
  • 6 cloves garlic small
  • 1 medium onion chopped roughly
  • 1 tomato chopped roughly
  • 1 tsp cumin powder optional
  • a pinch ground turmeric optional
  • 1/2 tbsp arrowroot powder or cornstarch
  • 1/4 cup water

Instructions
 

  • Bring water to boil, add garlic, onion, and tomatoes. Cook for 5 minutes.
  • Add Moringa powder and boil for 2 more minutes and switch it off. Close the lid and allow the powder to steep in water for 5 minutes.
  • Add them to the blender and puree them. Transfer to a fine mesh strainer to remove any discards.
  • Bring to heat. Add cumin powder, ground turmeric, pepper, and salt to taste.
  • Make a slurry with arrowroot powder and water to form a paste. Add the slurry paste to the soup and allow it to cook for a few minutes.
  • Adjust salt and pepper and serve warm.
