A twist to the classic french toast recipe, the overnight blueberry french toast casserole is a make-ahead breakfast dish that can be prepared in a jiffy. It is a big hit at our home every single time!

Most recipes I found online used a lot of eggs, sugar, butter and even whipping cream – in quantities I wasn’t comfortable with putting into my meal. So, I go with the proportion of ingredients I use for the classic french toast, and add in blueberries. When I happen to have cream cheese in the fridge, I put that in too. If you follow the baking time mentioned in my recipe, you will get a casserole that is moist inside and slightly crunchy on top.

This breakfast dish is perfect for when you want to sleep in on a weekend or when you have guests over. Skip the hassle of standing by the stove and pan-frying individual slices of French toast. I make it on weekdays as well – I put everything together into the baking tray in the morning before going off to work, and bake it in the evening. So although it is technically called an ‘overnight’ casserole, I just leave it in the fridge all day before baking. Warm it up the next morning in the microwave oven, and it is still super yummy. The only difference is that it won’t have a crunchy top then – it will be something between a crunchy toast and a moist bread pudding texture. We love it that way!

How can I reduce sugar content?

You can reduce sugar in the batter or skip it altogether if you want to. Instead, use healthier topping alternatives for sweetness. Homemade berry sauce with maple syrup or honey is my favorite! In the picture shown below, I have used powdered sugar and homemade blueberry sauce.

Ingredients
  

  • 12 Bread slices
  • 2 cups Milk
  • 6 Eggs
  • 3 tbsp Sugar optional
  • 1 cup Fresh Blueberries
  • 1/ to 1/2 cup Cream cheese cubed (optional)

Instructions
 

  • Tear the bread into chunks or cut it into 1″ x 1″ pieces.
  • Lightly grease a baking tray, and lay half the bread pieces in it.
  • Add the cream cheese cubes (optional) and half the blueberries to the tray.
  • Over this, add the remaining bread pieces.
  • Top it with the remaining blueberries.
  • In a separate bowl, mix milk, eggs and sugar to form the batter.
  • Pour the batter into the baking tray.
  • Cover the baking tray with aluminium foil and refrigerate overnight.
  • In the morning, take the tray out of the fridge and bake it covered for 30 minutes at 175 – 180 degree C.
  • Remove the foil and bake uncovered for another 30 minutes.
  • Check if the center is cooked by sticking a toothpick in. If it comes out clean, it is done.
  • Top it with powdered sugar / cinnamon / berry sauce / maple syrup / honey.

Notes

  • For Low-sugar Modifications: Reduce sugar or skip it altogether in the batter and instead use healthier topping alternatives like honey, maple syrup or homemade berry sauce for sweetness.
  • Make it dairy-free: Use dairy-free milk and cream cheese in place of regular milk and cream cheese.
  • Make it gluten-free: Use gluten-free bread instead of regular bread.
