  1. Wonderful recipe! Quick Q. can this be baked in a loaf pan? Additionally, can I substitute half of the oil w/ applesauce and substitute AP flour w/ wholewheat flour. PlZ advise …

    • Hi Farah! You can bake this in a loaf pan – making sure to only fill the pan to 3/4 full. It will need to bake longer however, I’m thinking up to an hour. Keep an eye on it and test for doneness using the toothpick test or cake tester. You can safely sub up to 1/4 C of the flour with whole wheat. I’m not sure about subbing with oil… it works just fine in other recipes, but since I’ve not made this with applesauce and/or whole wheat flour, I’m afraid you may need a new recipe or approach the recipe as an experiment.

    • Hi Liz! Of course, feel free to omit the icing. It’s lovely on its own, or it can be dressed up with a sprinkle of powdered sugar.
