    I have wanted to make this recipe for a while! Finally had all the ingredients and it came together so easily. I could eat bowls of watermelon every day in the summer so it’s fun to eat it in a slightly elevated way. I would bring this to any group food gathering too. I used Persian cucumbers, Himalayan pink salt, and an already-prepared balsamic reduction. I just eyeballed the amount of reduction to add, and it turned out great. I’ll double the recipe next time. Thank you!

    Brilliant recipe.. I made it for our Midsummer feast and it was very popular. I left out the mint as my partner cannot tolerate it, but it was still really tasty! I will definitely make again, especially as I am not a big fan of watermelon, but this way is delicious!
