Blueberry cupcakes

Cupcakes are one of my favorite type of cake which I often like to bake. These Blueberry cupcakes are super moist with flavors of blueberries. The simple Blueberry glaze adds more flavor to the cupcakes. They are so easy and convenient to make and eat also. One batch, which bakes around 6 cupcakes, is sufficient for us on a one time go. Moreover the cupcakes are so easy to decorate and look so tempting.

Blueberry cupcakes

Ingredients:

For the cupcake

Makes 6 cupcake

  • Refined flour(maida) – 1 cup
  • Powdered sugar – ½ cup
  • Curd(Dahi) – ½ cup
  • Refined oil – ¼ cup
  • Dried blueberry – ½ cup
  • Baking powder – 1 tsp
  • Baking soda – ½ tsp
  • Vanilla essence – 1 tsp
  • Milk – ¼ cup

For the glaze

  • Dried blueberry – ¼ cup
  • Sugar – 2 tsp
  • Water – ¼ cup

Directions:

  • Preheat the oven at 200° C for 10 minutes.
  • In a bowl mix all the dry ingredients except blueberries.

 

 

 

  • In another bowl mix curd, oil and vanilla essence. Don’t add milk at this point. 

 

  • To the wet ingredients add the dry ingredients and mix by cut and fold method. Do not over mix.
  • Now add the berries and mix. Add milk and mix.
  • I have added the whole dry berries, you can chop the berry into halves for the color. The chopped berries will from a light blue color around it after baking.

  • Pour the batter into the cupcake mould and bake it at 175° C for 25 to 30 minutes or till light golden color.

  • Till the cupcakes are baking we will prepare the glaze. In a pan take the berries. Add sugar and water to it. Heat the mixture for about 10 to 15 minutes on low flame. When the syrup will become just sticky in texture, switch off the flame. Crush the berries with the help of a scapula. As the syrup is hot the berries can be easily crushed to form a paste. Pass this spread through the sieve to separate the glaze.

  • Check if the cake is done by pricking a toothpick into it, if it comes out clear then the cupcakes are done. If not then bake it further.
  • Remove the tray from the oven and let the cake cool down to room temperature.

  • Top the cupcakes with the blueberry glaze and enjoy.
