You are going to love these peanut butter oat bar, they are easy and absolutely delicious. Who doesn’t like nut butter ?!

Granola bars are often considered a healthy snack and in some cases, I think granola bars can be a good source of fiber and protein to help curb cravings between meals. Many people consider them to be convenient and they enjoy their flavor and versatility. Unfortunately despite marketing claims, many packed granola bars are loaded with added sugar, calories, and artificial ingredients. Those are ingredients that you probably won’t be able to pronounce! ( hint 😉). Therefore, I try to avoid them whenever possible, and with this recipe, you are on a road to healthy snacking!

These peanut butter oat bars are pretty easy to make at home. You have control of what is going into them and you can create endless varieties of flavors. Oats and peanut butter together make a very filling combination that will keep you full pretty well into lunchtime! If you are a meal planner like me it is easy to include them on the list! ✌

How do I store these cookie dough bars?

I put them in a Tupperware and store them in a fridge. Alternatively, if you happen not to eat them in a week or two (very unlikely 😉) you can cover them and store them in the freezer. They should last in a freezer for at least a month if not longer.

Can I substitute nut butter?

As I said above you can easily substitute nut butter for tahini or seed butter. There are many tahini’s on the market I find that the runny tahini works better here. My favorite brand is Al Yaman. This tahini is super creamy, runny, and absolutely delish! I tried a good few brands and I keep coming back to this one every single time.

Ingredients
  

  • 3 cups oats ( or ready oat flour)
  • 1 cup crunchy peanut butter
  • ½ cup maple syrup
  • cup hemp seeds
  • 2 tbls coconut oil
  • cup vegan dark chocolate
  • pinch salt

Instructions
 

  • If you can't get the oat flour srmply put ypur oats in a blender and blend till fine crumbs.
  • In a small bowl melt the dark chocolate.
  • In a seperate bowl melt the coconut oil. If you don't want to use oil u can omit it but coconut oil helps to set those bars better in a freezer.
  • Mix the rest of the ingredients with coconut oil in a bowl.
  • Put the batter into a lined baking try and put in a freezer to set.
  • Take them out from the freezer and pour the chocolate over them or drizzle for the effect 😜😉 The chocolate will set immediately as the bars are frozen !
