One Pot Primavera Pasta

Are you are looking for an easy and delicious meal? This One Pot Primavera Pasta is definitely perfect for you.

This recipe only uses simple ingredients, the ones that most of us we already have stocked home. So this might be a great idea for lunch or dinner. And you also don’t have to cook much for this one.

Pasta Primavera is a dish made of pasta and fresh vegetables. The original recipe contains a lot of butter and Parmesan cheese, but I got you with a vegan version of it.

This is a one-pot meal, so it’s quick and easy to prepare. You just cook the onion and the garlic , then add the rest including the pasta and just leave it for 20 minutes.

You can use any type and shape of pasta. Pasta has gluten, so substitute it with the gluten free version, if you want a gluten free meal. It’s best to use shorter pasta, but any shape is good.

Feel free to use other veggies as well. Like cherry tomatoes, fresh corn, peas, bell peppers, spinach and anything you enjoy eating.

Ingredients

200 g pasta ( I used penne)

2 cups water

1 broccoli

2 carrots

1 onion

4 cloves garlic

1 hand fresh parsley

salt and pepper 

2 tablespoon olive oil

1 can coconut milk

Instructions

Step 1: chop the garlic and onion. Cut the broccoli and carrots

Step 2: in a high pan heat the oil. Then add the onions and garlic and cook for 3 minutes

Step 3: add the pasta, the coconut milk, water, broccoli and carrots. And let them cook for approx. 20 minutes, until there is no much liquid.

Step 4: chop the parsley. When the pasta are ready add salt and pepper to taste and the fresh parsley

Step 5: enjoy
