Makhana kheer | Fox nuts pudding | Makhane ki kheer recipe with step-by-step photos. Makhane ki kheer is a delicious Indian dessert made with makhana/fox nuts, milk, sugar, dry fruits and flavored with cardamom powder and saffron. This rich and creamy kheer is super easy to make and gets ready in very little time. You can serve this kheer during Navratri or fasting days.

Makhanas are also known as fox nuts, lotus seeds, and phool makhana. It is considered to be highly nutritious and can be consumed on fasting days. Usually used in savory dishes like makhane ki sabzi, roasted chatpata makhana, etc. Makhana is easily available in the market and can be stored for a long time.

The process of making makhana kheer is very simple. First, you need to roast makhana in ghee and then some of the makhanas are powdered along with cashews. Powdered makhana and cashews are added to the milk and cooked for some time to get a very nice, thick, and creamy texture and finally flavored with cardamom powder.

Ingredients
  

  • 1&1/2 cups Makhana/Foxnuts
  • 2 cups Full Cream Milk
  • 1 tbsp Ghee
  • 1/4 cup Sugar
  • 10 Cashews
  • 3 pods Cardamom
  • 7-8 strands Saffron
  • 1 tbsp Mix dry fruits, cashews, almonds, raisins

Instructions
 

  • Heat 1 tbsp ghee in a pan.
  • Add makhana and roast on a low flame till it becomes crunchy.
  • Transfer roasted makhana on a plate. Keep it aside.
  • Add 1/2 cup roasted makhana, cashews, and cardamom seeds in a blender jar. Grind it to a fine powder. Keep aside.
  • Heat 2 cups milk in a heavy bottomed pan. Bring it to boil.
  • When the milk comes to a boil, add makhana and cashew powder. Mix well. Add sugar and saffron.
  • Crush remaining roasted makhanas with your hand or grind it to a coarse powder.
  • When sugar dissolves, add crushed makhana and cook on medium to low flame for about 7-8 mins.
  • Meanwhile, heat 1 tsp ghee in a small pan & roast chopped cashews, almonds, and raisins.
  • Add roasted dry fruits to the kheer and cook for 2-3 mins. Switch off the flame.
  • Serve the kheer hot or chilled.
