How to Make a Peach Lavender Lemonade Spritzer

The height of summer is marked by ripe, juicy peaches and the fragrance of sun-beaten lavender. It’s also the season of refreshing, ice-cold lemonade in a sweating glass on the front porch. What better to combine the total essence of a hot summer day than with a peach lavender lemonade spritzer.

This fruity, herbal, sparkling lemonade starts with a peach-lavender syrup. Then, it’s shaken with ice and lemonade. Finally, it’s combined with sparkling lemon water in your favorite glass for a pretty, sweet mocktail.

So, let’s get started.

How to Make Peach-Lavender Syrup

The syrup starts with equal parts of sugar and water, much like a simple syrup. However, we drop simplicity to add in fresh peaches and lavender buds. To really get that peach flavor, you need 5 peaches. And for just enough lavender flavor without tasty soapy, you need 1 tablespoon of buds. You don’t need the stems, so compost them.

Start with Fresh Peaches

To handle the peaches, cut them open like you would an avocado. Slice around the circumference, and then twist the two halves of the fruit to pop it in half around the pit. Similarly, slice the half still containing the pit, and pop it once more to expose enough of the pit that it’s easy to pull out.

I leave the skins on, so it’s very important to wash the peaches before you get started. Pit and slice your peaches from there. There’s no need to perfectly cut everything. It’s just going to be boiled anyway.

I’d also like to note that this is a good way to use over-ripe peaches. If you have some in the fridge that are just past their prime, hello peach syrup!

Add in Lavender Buds

As for the lavender buds, you can use the dried kind you get at the spice shop or use fresh from the garden. It’s whatever you have available to you. If you use fresh, make sure to rinse and air dry. Check for bugs, dirt, and spiderwebs. Those things aren’t awesome in your syrup.

So, you’ll add your sliced peaches, lavender, sugar, and water to a pot and bring it to a simmer. Cover so you don’t lose too much water, and simmer for about ten minutes. Then, turn off the heat and let it steep until it’s cool to the touch.

From here, you’ll strain your syrup into a jar with an airtight lid. Keep your peach-lavender syrup in the fridge. Hold onto the strained peaches, though, for your lemonade.

How to Make Fresh-Squeezed Peach Lavender Lemonade

This whole section can be skipped, honestly, and you can go buy a bottle of Simply Lemonade and add your syrup to it. It’ll save you a heck of a lot of time, and frankly, it will taste delicious, just extra sweet.

Now, for those of you overachievers who want a fully authentic recipe (I mean, you’re here on a recipe blog, after all). Here’s how to make fresh-squeezed peach lavender lemonade.

In any good recipe, you start with simple syrup. Aren’t we lucky that we’ve just made some delicious peach-lavender syrup?

So, you will need about a pound of lemons to get almost 2 cups of juice. The cheat is to get a bottle of lemon juice concentrate, and then, you need 1 cup. Add about 6 cups of filtered water and your syrup, and stir it together.

TADA! You made lemonade! And it’s not just any old lemonade; it’s peach lavender lemonade, so you score extra points.

The Ultimate Peach Lavender Lemonade Spritzer

Now, let’s bring this thing home with our peach lavender lemonade spritzer! Maybe you took a sip already, and you were like, “Shit, this is fresh.” Or maybe you were thinking, “Hm… this is too sweet.” Either way, there’s one last step to improve your beverage: sparkling lemon water.

Lemon La Croix, or whatever your store brand version is called (I buy mine at Aldi) is great for adding bubbles and a little extra lemon power. Plain seltzer works fantastically as well. And all you have to do is pour a little bit over your iced lemonade for the ultimate peach lavender lemonade spritzer. Super easy!

Now, if you’re not going the mocktail route, and you need a little boozy boost, you can do this with a White Claw, prosecco, or you can simply add vodka to your lemonade before you add the seltzer. Remember to enjoy responsibly!

Peach Lavender Lemonade Spritzer

  • Lemon juicer
  • Medium saucepan

Ingredients
  

Peach Lavender Syrup

  • 1 cup sugar
  • 1 cup filtered water
  • 3 large peaches sliced
  • 2 Tbsp lavender buds

Peach Lavender Lemonade Spritzer

  • 1 cup peach lavender syrup
  • 1 cup fresh-squeezed lemon juice
  • 6 cups filtered water
  • lemon seltzer according to preference

Instructions
 

Peach Lavender Syrup

  • To make the peach lavender syrup, combine 1 cup of water, 1 cup of sugar, 3 sliced peaches, and 2 Tablespoons of lavender buds. Bring to a simmer for 5 minutes. Cover and steep until it's totally cooled. Strain and store the liquid in a jar with a lid in the fridge.

Peach Lavender Lemonade Spritzer

  • Squeeze the juice from a pound of lemons (you should get about 1 cup of fresh juice). Combine with 6 cups of filtered water and 1 cup of your syrup.
  • Pour a cup of peach lavender lemonade over ice in a pint glass. Top with as much lemon seltzer as you prefer.
  • Garnish with a sprig of fresh lavender and slices of fresh peaches.

Notes

NOTE: For a fabulous cocktail, shake one cup of peach lavender lemonade with 2 oz of vodka before topping with seltzer. Garnish as noted in the recipe above. Please drink responsibly.
