Chocolate White Wine Truffles

Indulgent and velvety smooth truffles, fit for any occasion. The white wine cuts the richness and adds for an acidity that balances the sweetness making for a perfect melt in your mouth bite. 

It is New Years and God knows how we all deserve a great start to the next year. With no explanation needed apart from the fact of saying it was the year of 2020. Everyone needs a fresh start, in saying this we will be having a very different celebration of sorts this year with loved ones displaced and social distancing the new norm. That doesn’t mean we are letting 2021 in without any celebration cause boy oh boy we need a fresh start given everything we’ve all had to get used to.

I have to be honest and tell you I have made these truffles with champagne before and they are absolutely delicious. I have made the same recipe with white chocolate and Rosé, or milk chocolate and red wine. I have played around with the flavors and ingredients but the ratios have been constant. Thats what makes these truffles perfect. Honestly if you don’t want to get fancy you can use Dark Chocolate and any Milk and believe they are jaw dropping delicious however its the season and we are in the mood for excess so…a little luxury makes for a great treat.

These are great to give away if you are in the mood of sharing your food. However they last well in the fridge for over a week. I currently have my stash sitting on the kitchen counter as it is winter and the weather is very cool. A few substitutes are mentioned below:

Dark Chocolate: If you are making this vegan, use vegan chocolate. I am making these using dark chocolate nothing less than 70% which adds for good balance of sweetness and bitterness. You can use any chocolate you like. I melt my chocolate in the microwave in 10 second intervals until smooth and lump free. White, milk or any chocolate you like works for this recipe.

Milk: I have used almond milk here, you can use coconut milk/coconut cream, any dairy milk, half and half, mylks, etc.

Wine: The recipe doesn’t need a lot of it however the little amount goes a long way. I have used white wine here however you can use red wine, rosé, liqueurs, etc.

Cocoa powder: This needs to be unsweetened. You can get away without using it but I love the flavor it adds to the truffles. 

Maple syrup: If the chocolate you are using is very dark and bitter, you might need a little sweetener to help balance it out. You can use any liquid sweetener here or even sugar/stevia. Agave syrup and honey also work well here.

There is no baking involved in this recipe however you do need to heat the chocolate in order for it to melt before mixing every ingredient in. The setting time of the mixture is essential, without which you cannot form the truffles. So Happy New Year 2021 to you Ninja! Here’s hoping you have a delicious year ahead. Happy Eating!

Chocolate White Wine Truffles

Equipment

  • Mixing bowl
  • Tablespoons

Ingredients
  

  • 300 gm Dark chocolate
  • 100 gm Almond milk
  • 15 gm White wine
  • 15 gm Cocoa powder
  • 5 gm Maple syrup

Decoration

  • 30 gm Cocoa powder
  • 1/2 tsp Sea salt

Instructions
 

  • Melt the chocolate until smooth (which ever method you are comfortable with)
  • Add the milk, wine, cocoa powder and stir. Keep stirring until combined. Taste and see if you need to add the maple. If not, leave it out.
  • Transfer to a shallow bowl and leave in the fridge to set for 2 hours.
  • Once firm, scoop out tablespoon worth of the mixture in your hands and roll until it forms the shape of a ball. Roll into the extra cocoa powdered sprinkle with sea salt on top.
  • Let them set for 10-15 mins before serving and eating.

Notes

Pro Tips
> Keep an eye on your chocolate while melting, do not let it over heat as this will make your chocolate grainy.
> Do not whisk the mixture together, use a spoon and patiently mix all the ingredients until combined, you don’t want to add air but just ensure all the ingredients are mixed through.
> If the mixture is sticking to your hands too much wear gloves or oil your hands a little.
> You can dip the set truffles into melted chocolate instead of rolling them in cocoa powder as well.
