Kale Chips

Do you ever just need something crunchy and salty to snack on? I sure do! And none of the snacks I've tried that are healthy and low carb are ever salty enough, so they never curb the craving.

I've made kale chips in the past and it's always so tedious flipping all the little pieces.

The thought popped in my head the other day to just leave the pieces whole, prepare them, then break them into bite size pieces after they've been cooked. SO. MUCH. EASIER.

It made the whole process simpler and faster, it takes hardly any time at all!

The How To

To start, make sure your kale has been cleaned and is completely dry so the oil will adhere. I usually wash it and then leave it out on the counter or dish drainer to dry for a few hours.

Preheat oven to 325F

Destem your kale pieces, you can hold the base of the stem in one hand and using your other hand slide the leaf right off the stem working from a starting position of your hands together and moving apart ( I recorded a video, because I'm way better at showing than describing, lol...but it was the first time using a new camera and my hands weren't in view for this part...I'll try again next time I make them;)). Leave the kale pieces whole, you will break them up after they are done cooking. This step minimizes the time spent making these significantly because you eliminate the tedious step of flipping every stinking tiny piece of kale over...because there are no tiny pieces! Or at least hardly any;)

Place the kale leaves on a baking sheet lined with parchment paper for easy clean up.

Spray an even coat of olive oil on all the leaves then sprinkle generously with nutritional yeast, Redmond's Real Salt and pepper. Want them spicy? Add a little more pepper, or some cayenne!

Bake for 15 minutes--

Remove from oven, flip each piece, spray with olive oil and sprinkle liberally with more nutritional yeast and more salt if you'd like (taste a piece and go from there)

Bake an additional 5-8 minutes, to your desired crispiness. Break into bite size pieces.

Enjoy a nutrient dense, guilt free, salty snack!
