Quick & Easy to Make

These pickled onions are ridiculously easy to make and so addicting! All you need are onions and sushi vinegar (sometimes labeled seasoned rice vinegar)! Just add both to a jar and mix well. Let the onions sit for a few hours and they’re ready to enjoy.

What if I don’t have sushi vinegar?

No problem! You can make your own sushi vinegar with just 3 ingredients: rice vinegar (or apple cider vinegar), sugar, and salt! Check out the recipe here.

How to Use Pickled Onions

I love adding these onions to salads in place of regular raw onions, or chopped up in chickpea salad for sandwiches. You can also add them to sandwiches, wraps, burrito bowls, avocado toast, tacos, chili, hot dogs, or chopped up in dips!

2 Ingredient Pickled Onions | 酢玉ねぎ

You need to try these super easy and refreshing two ingredient pickled onions! Perfect for adding to salads, sandwiches, wraps, and more.

Rest Time 1 hour

Ingredients
  

  • 1 small onion, thinly sliced
  • 2 tbsp sushi vinegar , also called seasoned rice vinegar

Instructions
 

  • Add onions to a jar and pour vinegar over. Put the lid on tightly and shake the jar to mix the onions with the vinegar. Place in the fridge and let the onions marinate for at least one hour.
  • The onions will soften and lose their sharp pungency as they marinate. If some of your onions still look raw after a few hours, add more vinegar and mix well.

**Notes

The onions will release liquid as they marinate, so the vinegar shouldn’t cover all the onions. They should be about half covered.
