I was skeptical about lavender at first but a friend convinced me I had to try a lavender latte and then I was hooked. I love its sweet floral flavor! Lavender Simple Syrup is aptly named as it is really is very simple to make. The only ingredients you need to make it are: sugar, water and lavender. Equipment needed is simple too: just a stove, pot and a strainer! Let’s make it!

You will just need 3 simple ingredients to make lavender simple syrup:

Where to buy lavender
The easiest way to buy lavender is online through amazon (affiliate link), but you can sometimes find it in grocery stores with more of a healthy focus, like Whole Foods and Sprouts.
Are lavender leaves edible?
Yes! All lavender should be edible, in its natural state, but it is best to buy culinary lavender (affiliate link) to make sure its freshest and free of any additives that you may not be aware are there.
Does lavender help with anxiety?
Lavender is widely used to reduce stress and calm the nervous system. It’s commonly used for aromatherapy and of course we find it in all sorts of lotions and other household products. Does eating it have any more of a calming effect? Not that I’ve personally noticed, but I do find it calming because you can’t help but take in the scent as you consume it. And there is research that indicates it really can reduce stress! Worth a try!
How to make lavender simple syrup
The process for making lavender simple syrup is just like any other simple syrup. You will need to boil equal parts sugar and water, and in the case of lavender syrup, you will add the lavender flowers to the sugar/water mixture as it boils.
After bringing to a boil, then simmering for about 5 minutes, you’ll need to strain out the flowers and store your syrup. Easy!

How to store it
Store syrup in a glass jar with a lid in the refrigerator. I like to use a bottle with a little pour spout, an oil bottle works great for this!
How long does this simple syrup keep?
The general rule of thumb for homemade simple syrups is to use for up to two weeks. Same goes for this lavender syrup!
Why is my syrup bitter?
Make sure you simmer the syrup for the allotted time and then strain within 10 minutes to keep bitterness away. Allowing the syrup to simmer or steep for too long (much like tea!) can result end up imparting a bitter taste to the syrup.
Uses for lavender simple syrup
Lattes – probably my favorite way to enjoy the sweet floral taste of this edible flower! Replace your usual sweetener in a latte with a tablespoon of lavender syrup and voila – lavender latte!
Lemonade – lemonade is also great with a little kiss of lavender. Try adding some to lemonade for a floral kick.
Cocktails – honestly, I’m not a cocktail maker but think it would work great for this as well.
Gifting – I love a good food gift! A little bottle of syrup would make a lovely gift for almost anyone as there are so many ways to use this syrup!

Ingredients
- 1 cup granulated sugar
- 1 cup water
- 2 1/2 tbsp dried lavender flowers
Instructions
- Place all ingredients in a stock pot over medium heat.
- Bring to a boil, then reduce to a simmer, and allow it to cook for 5 minutes.
- Strain syrup through a fine mesh strainer to remove the lavender flowers. Store in a glass jar or air-tight container for up to two weeks in the refrigerator.
