Chicken Parmesan Meatballs

Meatballs are the ultimate party food, but Chicken Parmesan Meatballs smothered in marinara sauce take the classic dish to the next level. Use fresh mozzarella pearls to achieve the melted cheese-stuffed center in perfectly bite-sized portions.

Ingredients

  • 1 pound ground chicken
  • ¼ cup oat flour (see note)
  • ½ cup Parmesan cheese, grated
  • 1 teaspoon basil
  • 2 teaspoons oregano
  • 2 teaspoons Italian seasoning
  • 1 teaspoon salt
  • ¼ teaspoon black pepper
  • ¼ teaspoon red pepper flakes, optional
  • 20-24 mozzarella cheese pearls
  • 24 ounces (1 jar) marinara sauce

Instructions

  1. Preheat the oven to 350 degrees. Line a baking sheet with foil, parchment paper or a silicone baking mat and spritz with cooking spray. Set aside.
  2. In a large bowl, combine the chicken, oat flour, Parmesan, basil, oregano, Italian seasoning, salt, pepper and red pepper flakes if using. Mix together until just combined.
  3. Form the chicken mixture into about 20 to 24 small meatballs and place on the prepared baking sheet. 
  4. Place a mozzarella pearl into the center of each meatball and reform the meatballs around the mozzarella.
  5. Bake meatballs for about 15 minutes. 
  6. Pour the marinara into a medium saucepan and simmer over medium-low heat to warm. Add baked meatballs to the sauce. Cover with a lid and allow to simmer for about 30 minutes.
  7. Keep the meatballs warm in the sauce until ready to serve.

Tips & Notes

You can make your own oat flour by pulsing rolled oats in a blender or food processor until ground into a flourlike consistency.
