Celebrating the holiday season with The Melted Snowman Peppermint Vanilla Ice Cream Cocktail! Vanilla bean ice cream blended with half and half, peppermint liqueur, and a drop of peppermint oil. Finish this delicious boozy milkshake with swirl of Chantilly cream and crushed peppermint for creamy, deliciously sweet, and oh-so festive cocktail. This is the perfect cocktail to enjoy all season long! Bonus? You can easily make this recipe into a mocktail!

About The Recipe

Saturday’s are for cocktails. And, for the past week or so, we’ve had a bit warmer weather than normal (I am also an ice cream all year long type gal), I thought it would be fun to whip up a boozy milkshake!

In all honesty, I am a sucker for vanilla ice cream. Especially vanilla bean ice cream. It’s one of my go-to flavors, but come Christmas time, I love a good peppermint ice cream. So, I wanted to combine BOTH of my favorites in one delicious milkshake.

Though, when I was testing this recipe, I could NOT get enough peppermint flavor. I kept adding more and more liqueur, hoping it was intensify the peppermint, but instead, the drink eventually just became so boozy (and not very peppermint-y) that it wasn’t very pleasant to drink.

I almost gave up on the idea…until I tried it with just a drop of peppermint oil!

This added the kick of peppermint that I was looking for, without making the cocktail too boozy.

Every sip is refreshing, creamy, sweet, and just SO delicious! It’s truly the perfect cocktail to make this weekend.

What is an Ice Cream Cocktail?

An ice cream cocktail, in this case, is simply a milkshake with a splash of alcohol added to it!

  • Vanilla Ice Cream – Whether you use homemade or store-bought vanilla ice cream, this milkshake will work either way! You can also use your favorite non-dairy ice cream to make this recipe.
  • Half and Half – My secret to a thick and creamy milkshake! If you don’t have half and half, you can make your own by combing ¼ cup heavy cream and ¼ cup whole milk. You can also your favorite use a non-dairy milk! I personally love oat milk in this milkshake.
  • Peppermint Liqueur – Adds a sweet, boozy, and very subtle peppermint taste to the milkshake.
  • Peppermint Extract – Just a small drop of peppermint extract adds just the right amount of peppermint flavor to this cocktail!

How To Make This Vanilla Ice Cream Peppermint Cocktail

Step 1: Blend

Combine all ingredients in a blender and blend on low speed until smooth.

Step 2: Serve

Pour into snowman glasses. Top with Chantilly cream and crushed peppermint!

How To Make This Recipe Into a Mocktail

This recipe is one of the easiest ones to convert into a mocktail (aka…a normal milkshake!). Simply leave out the peppermint liqueur. You’ll still get a nice kick of peppermint from the peppermint extract, but it will be great for kids and adults alike!

Substitutions

  • Homemade or store-bought ice cream can be used for this recipe. You can also use your favorite non-dairy vanilla ice cream!
  • If you don’t have half and half, you can easily make your own by combining ¼ cup heavy cream and ¼ cup whole milk. If you don’t have heavy cream, you can use just whole milk.
  • Alternatively, you can use your favorite non-dairy milk to make this recipe vegan! I personally love this recipe with oat milk.
