Since blood orange season lasts for relatively short time ( December to April, at its best ), I tend to freeze blood orange fresh juice to have for Duck a l’Orange and desserts during the year.

 

Now, this orange truffle recipe is somehow different from the usual ones made with dark bitter chocolate. The color of these truffles shows this citrus candy is all about blood oranges. If you add some red food color to the mixture as I did, you get beautiful red pearls for any chocolate gift basket.

Also, I skipped orange essence that match all the flavours of Orange Blossom Cake Bread , and here you have new kind of smooth and creamy truffle that emphasizes floral and tart flavor. What is also great is that they have fewer seeds so it is so much easier to prepare smoothies or desserts or any food with them !

How to make blood orange truffles?

First, I would say: don’t rush. Combine all the ingredients as instructed but leave them to cool overnight. Make bite sized truffles the other day and coat them with powdered sugar. I guess you noticed there is no extra sugar in this chocolate truffles recipe so thin coat of sugar is great!

Once done, place them on your serving platter but keep in the fridge before serving.

Can you freeze homemade orange truffles?

Of course. Place them on the platter, freeze and then pack orange candies to zip-top bags to store up to one year. That way, you can enjoy homemade citrus flavor tasty white chocolate candies whenever you like.

Blood Orange Truffles

Ingredients

  • 200 grams white chocolate chips : 1 cup
  • ½ cup whipping cream
  • 1 Tbsp unsalted butter, room temperature
  • ½ cup blood orange juice
  • Red food colour to taste
  • 3 Tbsp corn starch
  • 3 Tbsp vanilla cookie crumbs
  • 6 Tbsp powdered sugar to coat the truffles

Instructions

  1. In sauce pan with thick bottom,melt white chocolate, butter and whipping cream, on low heat, until all chocolate is melted.

  2. Add orange juice, food color and corn starch. Stir constantly. It should take 3 – 5 minutes.

  3. Once it gets thick, add cookie crumbs, mix well and leave in the fridge overnight.

  4. Put powdered sugar in a shallow bowl.

  5. Scoop one teaspoon of mixture at a time and roll into a ball, using your hands.

  6. Drop the ball into powdered sugar and roll around to cover each truffle completely for additional sweetness.

  7.  Set the truffles on a plate and store in the fridge before serving.
