This Pesto Turkey Sandwich is the perfect way to enjoy a batch of homemade pesto (or even store-bought pesto)! It makes a homemade lunch feel special so you won’t miss getting take out.
I’ve been making this Turkey Pesto Sandwich on repeat ever since I made that walnut kale pesto. This sandwich is the perfect fall lunch! You don’t have to make your own pesto, but it’s really good (and easy), I promise. But if you don’t want to, I’m going to give another easy tip in this recipe to elevate any homemade sandwich that you really need to try! Let’s make lunch!

Turkey Pesto Sandwich
To make this sandwich recipe, you will need:
- Bread: choose one you love! I try to always find the best bread I can find, meaning minimal ingredients and it actually gets moldy when left out for a few days. As a backup though, I really like Milton’s multigrain.
- Pesto: make my walnut kale pesto or use your favorite store-bought pesto
- Mayonnaise
- Turkey: when you want to make a killer homemade sandwich, the ingredients matter! Get the best you can find.
- Provolone: my go-to sandwich cheese forever.
- Marinated tomato: sliced tomato, vinegar, avocado oil, salt and pepper
- Mixed greens
How to make this pesto turkey sandwich
If you’re making your own pesto, do this first! If using store-bought you’re almost ready to start assembling, but remember I said I was going to teach you a little trick to make this sandwich (and any sandwich) taste even better? Well here it is: marinate the tomatoes. All you need to do is slice tomatoes, place them in a bowl and add some oil, vinegar, salt and pepper. Let this sit for about 10 minutes and you’re good to go. Trust me, it adds so much flavor!
Now let’s make this sandwich already. Start by toasting bread. You can also skip this part, assemble the sandwich and grill it to make a panini but this is how I do it.
Then, spread one slice of bread with mayo and slather the other one up with plenty of pesto. Then add the provolone cheese, and then the turkey. Lastly, some mixed greens for health and it’s lunchtime baby!

- 2 slices multi-grain bread
- 2 1/2 tbsp pesto
- 1 tbsp mayo
- 2 slices provolone cheese
- 2 slices marinated tomatoes
- 3 oz turkey deli meat
- handful of mixed greens
Marinated tomatoes
- 1 tomato (sliced)
- 3 tbsp red wine vinegar
- 4 tbsp avocado oil
- 1/8 tsp salt
- pinch of black pepper
Instructions
- Toast the bread, then spread one slice with mayo and the other with pesto.
- Add in order to one slice of bread: provolone cheese, sliced tomato, turkey and mixed greens. Top with remaining slice of bread. Enjoy!
