Apple Pie Breakfast Cookies

These apple pie breakfast cookies combine the tastes of a homemade apple pie with the great added texture of oats into a perfect breakfast cookie that makes a deliciously sweet start to the day. These rich, sweet, and healthy cookies are perfect with a glass of milk or a cup of coffee to get your day off on the right foot! 

I do think that it’s important to have breakfast. Sometimes we don’t have time to scramble some eggs or even make a bowl of oatmeal. So, what to do? Bake a batch of these delicious apple pie breakfast cookies the night before and have them ready for a grab and go breakfast the next morning.

In my book, breakfast should be delicious while still being on the healthy side. I think these breakfast cookies fit the bill. They’re  filled with delicious, healthy ingredients and not too sweet. Great for snacks during a hectic work day and also a nice treat in lunch boxes. My favorite time to have one or two, at night with a cup of tea watching one of my favorite shows.

Apple Pie Breakfast Cookies

These delicious cookies start with oats, apples, and flax. I combine them with classic apple pie spices and the natural sweetness of maple syrup. Then, bake  until they’re golden and delicious. I love to serve these as a sweet breakfast on their own or with savory favorite, and of course, a glass of milk or a cup of coffee or tea.

Ingredients

It only takes a handful of ingredients to make this recipe, and you can find them all in one quick trip to the grocery store – of course, that’s only if you don’t have them in your kitchen already. And you just might!

  • 1 cup old-fashioned oats, divided (If you don’t have old fashioned oats, you can use quick oats, the texture will be slightly different)
  • 1/2 teaspoon baking soda
  • 1 1/4 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon fine sea or kosher salt
  • 1/4 cup ground flax, I used golden flax seeds, I grind the seeds right before using.
  • 2 tablespoons butter, melted and cooled, you can use coconut oil in it’s place.
  • 1/4 cup maple syrup
  • 1 egg
  • 1 teaspoon vanilla extract, my favorite 
  • 3/4 cup finely diced green apple
  • 1/2 cup chopped pecans, optional

How to Make Apple Pie Breakfast Cookies

This is a quick and easy recipe that only takes a few minutes and a few simple steps. Anyone can make it, and everyone always loves it. 

  1. Preheat oven to 375 degrees. Prepare a large baking sheet with parchment paper or a Silpat.
  2. Place 1/2 cup oats into a mini chopper or blender and pulse until the oats are ground
    into flour.
  3.  In a large bowl, whisk together oats, oat flour, baking soda, cinnamon, salt, and flax meal.
  4.  In a medium bowl, whisk together the butter, maple syrup, egg, and vanilla. Combine the
    wet ingredients with the dry ingredients.
  5.  Stir in the apple and pecans if using.
  6.  Using a medium cookie/ice cream scoop, divide the dough into 15 cookies. Lightly press the tops flat as these
    cookies remain in the same shape as they cook.
  7.  Bake for about 10 minutes or until the middle is set. Allow to cool on the baking sheet for 5
    minutes. Then, slide the parchment paper onto a wire rack.  Enjoy!

Substitutions and Variations

  • Walnuts work well in place of pecans if you prefer.  
  • Try adding a dash of allspice or apple pie spice as well.

Store these cookies at room temperature in an air-tight container for up to 3 days. You can refrigerate them for up to a week, as well. For longer storage, freeze these cookies for up to 2 months in an air-tight container.

Tips

  • Be sure you let your melted butter or coconut oil cool to room temperature.
