Rich and indulgent chocolate fudge brownie mixed and baked in a mug in the microwave. This is a simple and effortless dessert to make when you are craving something sweet and delicious.
This recipe is my simple brownie in a mug. It is not any brownie, this is my fudge brownie in a mug. But down be fooled but the fact that it is a fudge brownie, this is a fudge brownie that is baked in the microwave. Yes, if you don’t have an oven, let this microwave recipe be the only brownie recipe you will need. The brownie take around 2- minutes to bake and not more than minutes to mix together, meaning: only 5 minutes stands between you and this brownie in a mug.
Recipes like these are PERFECT single serve options. If you don’t want to make large quantities, dirty a lot of equipment and enough just for your self then this is the recipe for you. With valentines day round the corner, this is a yummy dessert to prepare for your self, your loved ones or as a gift to impress someone. Microwave mug cakes are basically cake batter recipes that can be baked in the microwave and have the same result as that of baking in an oven.
Mug brownie is basically brownie batter baked in mug and served in the same mug. They are efficient to serve as individual desserts. This is a microwave brownie in mug meaning we bake the brownie in the mug in the microwave. I don’t have a bake setting on the microwave so I bake it on regular heating mode for 1 minutes first and then 30 second intervals until done.
All brownie recipes are different and all microwaves are different. There is no universal way to bake brownies. However, when making brownies in the microwave, always under cook them, hence start by cooking then for 1 minute on the heating mode. Keep increasing by 30 second intervals and test the texture with a knife or tooth pick.
The beauty about this recipe is that we down need any fancy ingredients. They are most likely already sitting in your kitchen pantry. For the dry ingredients we need all purpose flour, cocoa powder (unsweetened), brown sugar, baking soda and salt. For the wet ingredients we need melted butter, milk, vanilla, vinegar and dark chocolate chips.
To keep this cake gluten free, use gluten free flour mix cup for cup measure. If you want to make this cake vegan use any oil in place of the butter and a plant based milk of your choice. The cocoa powder must be unsweetened – doesn’t have to be dutch processed however you cannot use hot chocolate/drinking chocolate mix here. Instead of the brown sugar you can use white sugar as well. You can use any chocolate chips you like, I prefer dark.
The cake batter is mixed in the mug you will microwave it in, I have used a 10 -12 ounce mug to make this cake, the smaller the mug the higher the chances of the batter over flowing while baking in the microwave. The battle should come half way in the mug. It can also fill the mug s little more than half way through. Alternatively you can bake the batter in two smaller cups. I have used a rubber spatula to mix the batter. If you have lumps in the dry ingredients I would recommend sifting them through a strainer. We also need a microwave to make this cake.
In the mug you will bake the brownie add the cocoa powder, flour, baking soda, salt and stir together. Add the melted butter, milk, vinegar, brown sugar and stir together until combined and smooth. Add the chocolate chips and bake. Now I baked this brownie on the regular heating setting in the microwave for 1 minute, opened and check the brownie, continued baking for 30 second intervals twice after that, hence my brownie baked in 2 minutes.
I would recommend underbaking the brownie, serve it hot with vanilla ice cream or whipped cream. I have also served these brownies with coffee ice cream and it is such a winner. The brownie best served hot or warm but it is so indulgent and fudgy you can get away with serving it cooled as well. Once the brownie baked it can be kept for 1 week in the fridge (stored in the same mug just covered with cling wrap). I doubt it will last that long though.
