How many ways can one bake with blueberries? This is a question my mom and I ask ourselves every year. From mixing them into loaf cakes, a breakfast casserole, muffins, sweet rolls…even tiramisu! We’re always baking up something blueberry. But today, we wanted to to do something simple, a timeless dessert that really lets the blueberry shine. This blueberry cobbler is a treat that really delivers sweet and bright flavor with very little effort! What’s not to love?!

3 Reasons Why You Will Love This Blueberry Cobbler

  1. It’s Easier Than EVER Before. While cobblers traditionally have a biscuit-like topping, similar to our peach cobbler, this recipe erases the hassle of sticky dough! All you need to be able to do is whisk. That’s it! Just mix-up a batter and bake.
  2. Basic Ingredients. I can guarantee that every ingredient needed for this recipe, you already have in your pantry/fridge. It’s such a simple recipe that you are sure to love making (and eating!).
  3. Perfect For Fresh or Frozen Blueberries. Whether berries are in season or not, you can bake-up this cobbler.

A Quick Overview of The Ingredients You Need

There are 2 components in a blueberry cobbler: the blueberries and the cobbler. The batter for this cobbler is a modified version of the recipe we use for our blueberry pancakes! For the blueberries, since we are putting them on top of the batter rather than under, we opted to use the same technique we use for our lemon blueberry cake to keep our blueberries from sinking.

  • Blueberries – The star of the show. While we prefer fresh blueberries for their sweetness and pop of flavor, frozen blueberries will work as well.
  • Granulated Sugar – Used in 2 places in this recipe, granulated sugar is first tossed with the blueberries to enhance their natural sweetness. We then added a small amount to the batter to sweeten it slightly and enhance the sweetness of the blueberries even more.
  • All Purpose Flour – This was used in 2 different places in this recipe. First, it was tossed with the blueberries and sugar to help keep them evenly distributed in the batter. Second, it’s the base ingredient of the cobbler because the protein content in all purpose flour is just the right amount to give this cobbler the perfect texture and structure.
  • Lemon Zest – A little bit of lemon zest brightens the cobbler and really complements the flavor of the blueberries.
  • Baking Powder – The leavening agent responsible for the rise in this cobbler.
  • Salt – Just a little bit enhances the flavor.
  • Eggs – The binder that holds all the ingredients together, eggs also contribute structure, stability, moisture, and richness.
  • Whole Milk – The higher fat content in whole milk is ideal for helping to tenderize this cake as well as contributing to the structure and helping keep it moist.
  • Unsalted Butter – With a bright, fresh flavor that adds richness, unsalted butter also adds moisture and flavor and allows us to control the level of salt.

What Are The Best Blueberries To Use?

Firmer blueberries are ideal for baking. It’s best to avoid mushy or mealy blueberries, as well as blueberries that may be molded or smell unpleasant. We also tend to avoid using jumbo blueberries in baked goods, as they are bigger and heavier than a traditional berry. Smaller, firmer blueberries that are naturally sweet are the best to use for a blueberry cobbler. If blueberries are in season where you live, try checking out your local farmers market for delicious blueberries.

Here’s How to Make an Easy Blueberry Cobbler

Step 1: Prep the blueberries

In a large bowl, toss blueberries with 4 Tablespoons sugar and 4 Tablespoons flour. Set aside.

Step 2: Make batter

In another large bowl, whisk 2½ cups flour, 5 Tablespoons sugar, lemon zest, baking powder, and salt together.

Add eggs, egg yolk, melted butter, milk. Whisk until combined.

Step 3: Bake

Pour into prepared pan. Spread blueberries on top of batter. Bake for 65-70 minutes, or until the top is golden brown and the cobbler is cooked through.

Easy Skillet Blueberry Cobbler

Ingredients
 

  • 6 cups fresh blueberries, washed and drained
  • 4 Tablespoons granulated sugar
  • 4 Tablespoons all purpose flour
  • cups all purpose flour*
  • 5 Tablespoons granulated sugar
  • teaspoons lemon zest
  • teaspoons baking powder
  • teaspoon salt
  • 2 large eggs, room temperature
  • 1 large egg yolk, room temperature
  • 1⅞ cups whole milk, room temperature
  • 5 Tablespoons unsalted butter, melted

Instructions
 

  • Heat oven to 350℉.
  • Spray a 12 inch cast iron skillet with baking spray. Set aside.
  • In a large bowl, toss blueberries with 4 Tablespoons sugar and 4 Tablespoons flour. Set aside.
  • In another large bowl, whisk 2½ cups flour, 5 Tablespoons sugar, lemon zest, baking powder, and salt together.
  • Add eggs, egg yolk, melted butter, milk.
  • Whisk until combined. (It doesn't have to be smooth.)
  • Pour into prepared pan.
  • Spread blueberries on top of batter.
  • Bake for 65-70 minutes, or until the top is golden brown and the cobbler is cooked through.

Notes + Tips!

*This recipe was written using an average of the dip and sweep method for measuring flour and the spoon and level method. If you are using a scale, you will need to add 3/4 oz or 22 g  to the measurement for each cup of flour.
How To Store:
You can easily keep this cobbler in the fridge. Just cover with plastic wrap or foil and it should keep about 4-7 days.
 
Tips For Sucess:
  • Room temperature is about 70℉.
  • Use an oven thermometer to ensure accurate cooking temperatures.
  • You can substitute frozen blueberries.
  • You can substitute salted butter for the unsalted butter with no adjustments.
