One Pot Basil Shrimp Pasta

This one pot basil shrimp pasta is a great weeknight dinner option that requires little clean up and even fewer ingredients.

Are you a fan of shrimp scampi? Or just about any pasta dish coated in butter, sprinkled with a little heat and smacked with a chunk of garlic? Then this is the dish for you.

Now that I have an almost one-year-old, it can be hard getting dinner together after running on fumes by the end of the day. So any excuse to do the minimum for a meal is my first choice, and to have only one to three pieces of equipment to wash by the end of it all is another big plus.

I appreciate the fact that this one Pot basil shrimp pasta is a no-fuss and budget friendly meal. And it’s a great way to use the rest of that big pack of basil purchased from the market that you have no idea what to do with. This dish calls for a stem worth, about 4-6 leaves, but you can add as much as you want, especially for those obsessed with the herb as much as I am. I have one basil plant at home that is constantly growing, so I use every excuse I can to add basil to a recipe when given the chance.

Making this dish will be fast, under 5 minutes once the pasta is al dente, so its best to be prepared and have all of your ingredients ready before cooking.

One Pot Basil Shrimp Pasta

Ingredients
  

  • 8 oz. raw shrimp, peeled + deveined (Left whole or cut into chunks)
  • 8 oz. Linguine pasta (You can also use spaghetti or Fettuccini pasta)
  • 3 Tbl. unsalted butter
  • 3 Tbl. Olive oil
  • 5-6 cloves garlic, minced
  • 1 tsp. lemon pepper
  • 1/4-1/2 tsp. red pepper flakes
  • 1/4 cup fresh basil (about 4-5 leaves), chopped (Or 1 Tbl. dried Basil)
  • 1-2 tsp. dried parsley
  • 1/4 cup grated parmesan cheese, for garnish (Optional)

Instructions
 

  • In a large pot, cook the pasta according to the directions. Reserve 1/2 cup of the pasta water and discard the rest. Transfer the pasta to a medium bowl and toss with 1 tablespoon of olive oil. Set aside.
  • In the same large pot, add the butter and remaining 1 tablespoons of olive oil over medium-low heat.
  • Once melted, add the garlic and cook for 1-1 1/2 minutes or until lightly golden and aromatic, constantly stirring to prevent burning.
  • Add in the shrimp. Cook on each side for 30 seconds or until pink.
  • Stir in the lemon pepper, red pepper, parsley, and chopped basil. Cook for one more minute.
  • Toss in the cooked pasta until well coated. If the pasta appears dry, add in 1/4 cup water at a time until it becomes creamy.
  • Season with salt and pepper.
  • Garnish with parmesan and serve.
