Step 2: Pour the liquid into a large plastic resealable bag with 2 chicken breasts and four thighs. I'm using bone-in, skin-on chicken. I think it tastes better. However, you could use boneless, skinless chicken too.

Step 3: Place the bag of chicken into the refrigerator overnight turning a few times.

Lemon juice, salt, pepper, red pepper flakes and chicken broth in a bowl.

Step 4: Remove the chicken from the bag and reserve the liquid marinade. Then add 1 cup of chicken broth to the marinade and 1 teaspoon of red pepper flakes.

Step 5: Dredge the marinated chicken pieces in flour and place them skin-side down in a deep baking pan. Then pour the marinade and chicken broth mixture into the pan as well.

Step 6: Bake at 350 degrees for 40 minutes.

Step 7: Then flip the pieces over and bake for an additional 30 minutes.

Serve with fresh slices of lemon if desired.

You can use the lemon sauce in the pan to drizzle over the rice, potatoes, or pasta.

Any leftovers can be placed in an airtight container in the refrigerator for a few days.

Tip: Leftovers would make a great base for chicken salad.

Ingredients
  

  • 2 chicken breasts - bone in, skin on
  • 4 chicken thighs - bone-in, skin on
  • 1 cup freshly squeezed lemon juice ~ 4 large lemons
  • 2 tablespoons lemon zest
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 teaspoon red pepper flakes
  • 1/2 cup chicken broth
  • 1 cup flour

Instructions
 

  • Combine lemon juice, salt, and black pepper into a bowl.
  • Place chicken pieces into a gallon size zip plastic bag.
  • Pour lemon juice with salt and pepper over the chicken and close the bag.
  • Set the chicken in the refrigerator overnight, turning a few times.
  • Preheat oven to 350 degrees.
  • Remove chicken from plastic bag, reserving the liquid.
  • Dredge the chicken pieces in flour and place skin side down into a deep baking dish that has been sprayed with cooking oil.
  • Add one cup of chicken broth and red pepper flakes to the reserved marinade and stir.
  • Pour the reserved liquid and broth into the baking pan with the chicken.
  • Bake for 40 minutes.
  • Remove the baking pan and turn over the chicken pieces.
  • Return the pan to the oven and cook for an additional 30 minutes.
  • Garnish with fresh slices of lemon if desired.
