Cucumber Boats

I am always searching for quick, healthy and easy snacks - aren’t we all? This one works… for the most part. I can’t see myself packing this one for work and whipping it out at my desk, so we’ll say this is a good weekend snack or when you get home from work snack. Well, now that I think about it I guess you could just chop the cucumber and mix it in with the cottage cheese and take it to work..? I digress.

If you like cottage cheese, and cucumbers then this will be a little slice of heaven for you. Once I made this and ate it I realized that the cottage cheese mixture would work plain, or with melon or berries, etc. So mix it up however you want!

**I get a LOT of questions and comments on this one - Yes, it would be awesome with tomato and celery, or dried spices, and greek yogurt would be awesome! I’m sad I didn’t think of this first! Make it your own!

Cucumber Boats

Yield: 2-4 servings

Prep Time: 10 minutes

Total Time: 10 minutes

Ingredients:

1 cucumber, peeled, halved and seeds scooped out
3/4 cup cottage cheese
2 tablespoons basil, chopped
2 tablespoons cilantro, chopped
Salt and Pepper - to taste

Directions:

Peel a cucumber - all the way if you want, or just some. I tend to only peel about half of it. That sounds weird. What I mean is that I only take off about every other half inch of skin on the cucumber. Even that sounds weird. You'll just see in the pictures. Anyway, slice it in half and using a spoon scoop out all the seeds. Think ants on a log when you are doing this.

Mix together the cottage cheese, basil, salt and cilantro and fill the hollowed out area. I topped mine with the cracked pepper.

    Just made this with cottage cheese pre-made with chives … yum! I scooped the extra out of the bowl with crackers

    I bet just a touch of lemon zest and juice would be so good … great snack for the. kids !
